Another stable in Chinese cuisine. Honestly, I do not know any Chinese restaurant in America that does not have some variation of Broccoli Beef. It’s quick and easy. Took all 15 minutes to cook. Great to serve over rice or noodle. Like most kids, I didn’t like broccoli when I was younger. This dish is the only way that got me to eat broccoli, because the broccoli soaked up all the sauce. Making a otherwise blend vegetable flavorful.
Like my Tomato beef, I’m choosing to use ground beef for this dish. Simple because I’m cooking for one and I just brought a pound of ground beef. Also it saves me time not having to slice beef.
INGREDIENTS
- 1/3 pound ground beef
- broccoli florets, cut into some pieces
- 1 Tbsp minced garlic (2 cloves)
- 1 Tbsp minced ginger
- 2 Tbsp soy sauce
- 3 Tbsp oyster sauce
- 3 Tbsp shao hsing cooking wine
- 1/2 tsp sesame oil
- 1 Tbsp honey
- 1 tsp rice vinegar
- scallion for garnish
- 1 tsp flour/ cornstarch
- 1/2 cup water
PREPARATION
1. Mix minced ginger, garlic and ground beef in bowl.
2. Set skillet over medium-high heat. Heat up sesame oil. Add ground beef and cook until no longer pink. Break it apart and stir often as the meat cook. Stir in flour/ cornstarch as meat turn brown
3. As the beef turn brown, add in oyster sauce, soy sauce, honey, rice vinegar, and water. Mix them well.
4. Add broccoli to the mixture, and stir to combine. Bring the mixture to a boil then let it simmer until sauce reduce, and broccoli is cooked through to your desired tenderness.
5. If it is still watery when the broccoli is cooked. in a small bowl dissolve some cornstarch/ flour in water, and slowly pour into the pan until sauce is thickened.
6. server over rice or noodle. Garnish with scallions or sesame seeds if using
NOTES
You can substitute a lot of ingredients. If you don’t use honey, you can use 1 Tbsp of brown sugar. Skip cooking wine, rice vinegar, and sesame oil if don’t have. You can also use beef broth instead of water. Add spicy sauce if you like. Increase soy sauce by a Tbsp if don’t have oyster sauce. Just add little by little to make sure it won’t get too salty.
