Miso is both savory and sweet. This easy healthy dinner is best serve with rice. I added sautéed spinach for the color.
INGREDIENTS
- Skin on salmon filet
- 2 Tbsp white miso (or a mix of red & white miso)
- 1 Tbsp sake
- 1 Tbsp mirin
- 1 Tbsp soy sauce
- 1/4 tsp sesame oil
- scallion for garnish
PREPARATION
1. Mix all the ingredients together in a large bowl. Add salmon to marinade. Turn to coat, skin side up. Cover and refrigerate for 30 minutes to an hour. ***do not marinate for more than an hour, miso tend to be salty.
2. Set broiler to high and preheat for 3 minutes. Place the salmon on baking sheet, skin side down. Remove excess marinade as they burnt easily.
3. Broil the salmon on middle rack for 10-12 minutes until cooked through.
4. Remove salmon from oven, carefully turn it over, skin side up. And place it back in oven, 2 inches from top for about 2 minute. This will make salmon skin crispy.
NOTES
If you don’t have mirin and sake, dry white wine will do. You can also add a little brown sugar to the marinate mixture to add sweetness.
